Tumis Nangka Muda & Ayam (Stir-Fry Young Jackfruit & Chicken)

Bahan
500 gr Nangka muda-rebus kmd iris2          -  3 Baw.merah-iris2, ½ st Lada, ½ st Gula
½ Daging dada ayam-ptg tipis panjang         -  25 Daun kemangi, 1 Dn salam, Garam
10 Daun melinjo-ptg2, 100 ml Santan         Haluskan:
100 ml Kaldu ayam, 2 cm Laos-geprek        -  3 Baw.merah, 2 Baw.putih, 1 st Garam
2 sm Minyak, 1 Cabai mrh-iris (opsional)    -  2 Cabai hijau *, 2 cm Kencur

Cara membuat
-   Tumis bumbu halus, lengkuas, baw.merah & cabai iris di wajan/pan hingga harum. Mskkan ayam & salam, masak hingga ayam berubah warna.
-   Kecilkan api. Tuang kaldu, santan & bumbu2 ke dlm tumisan, aduk rata. Mskkan daun melinjo & nangka. Masak hingga cairan tinggal setengahnya sambil sesekali diaduk.
-   Besarkan api, masak hingga cairan mengering. Angkat dari api, beri daun kemangi, aduk rata.
* Bila tidak suka pedas, buang bijinya.

Ingredients
500 gr young Jackfruit-boiled, 1 Bay leaf      -  3 Shallots-thinly sliced, 2 tbsp Oil
½ Chicken breast fillet-thinly sliced                   -  25 Lemon basil leaves-cut
100 ml Coconut milk, 100 ml Chicken broth    Grind into a paste:
2 cm Galangal-crushed, ½ tsp Sugar, Salt       -  3 Shallots, 2 cloves Garlic
1 red Chili-sliced (optional), ½ tsp Pepper        -  2 Green chilies *, 1 tsp Salt
10 young Melinjo leaves-sliced (optional)           -  2 cm Lesser galangal

Directions
-   Slice the jackfruit thinly; set aside. In a pan/wok, saut√© the spices paste, galangal, sliced shallots & red chili until fragrant. Put in the chicken & bay leaf; cook until the chicken color changed.
-   Turn the heat to low. Pour the broth, coconut milk & seasoning into the pan; stir well. Add in the jackfruit & melinjo leaves. Cook until only half of the liquid left; stir occasionally.
-   Turn the heat to high, cook until the liquid absorbed. Remove from the heat, stir in the lemon basil leaves.
* Discard the chilies seeds & membranes if you don`t want the dish to be spicy.
