Babi Panggang Crispy/Siao Bak (Crispy Roasted Pork Belly)


In Indonesian & English

Bahan
500 gr Daging perut babi (berkulit)          -  1 sm Saus soya pekat (opsional)
1 sm Madu+1 sm Air, ½ st Baking soda   Bumbu kering: Campur semua
2 st Garam+2 st Cuka beras                       -  1 st Bumbu ngohiong, 2 st Gula, ½ st Lada
2 sm Rum (opsional)                                       -  1 st Bawang pth bubuk, 1 st Garam

Cara membuat
-   Cuci kmd keringkan daging. Kerat memanjang dibeberapa bagian dari sisi dagingnya (kedalaman ± 1½ cm-jangan potong bagian kulit). Tiap keratan hrs berjarak sekitar ± 2½ cm satu dng lainnya.
-   Lumuri sisi berdagingnya dng bumbu kering & saus soya pekat, kemudian ulasi sisi tepi daging dng rum.
-   Ltkkan daging di rak panggang, sisi kulit menghdp atas. Keringkan kulit kmd tusuk2 merata. Ulas kulit dng campuran garam-cuka. Simpan daging terbuka di kulkas selama min. 8 jam (semalam).
-    Pnskan panggangan Bbq arang atau oven dng api atas 200° C.
*  Panggangan Bbq arang: Ulasi bagian kulit dng campuran cuka-garam & bagian daging dng campuran madu-air. Ltkkan daging di panggangan, sisi kulit menghadap ke atas. Tutup & panggang ± 45 mnt (hampir matang). Keluarkan daging, tumpuk/ltkkan sebuah rak panggang tinggi dng permukaan rata di atas rak dari alat Bbq. Semakin jauh jarak dari api yg diberikan, semakin kecil kemungkinan kulit hangus. Ltkkan daging di atas rak panggang rata tsb, sisi kulit menghadap bawah. Panggang daging sampai crispy & suhu tengahnya mencapai 68° C.
*  Oven: Ltkkan rak panggang di dlm loyang berisi air. Ltkkan daging di atas rak tsb, sisi kulit menghadap bawah. Ulasi sisi berdagingnya dng campuran madu-air. Mskkan ke oven di rak tengah & panggang ± 20 mnt. Balik posisi daging (kulit menghdp atas). Lap kulit kmd tusuk2 permukaannya & ulasi dng campuran garam-cuka. Panggang 15 mnt. Klrkan daging, lap kulit dari lemak2 yg terbentuk. Tambahkan baking soda ke dlm campuran garam-cuka, aduk. Ulasi sisi kulit dng campuran tsb. Panggang selama 15-20 mnt (sampai kulit crispy). Keluarkan dari oven, istirahatkan selama 15 mnt, kmd iris2. Sajikan dng saus hoisin/irisan rawit+kcp asin.

Ingredients
500 gr of Pork belly (with skin on)                            Dry ingredients: Mix all
1 tbsp Honey+1 tbsp Water, ½ tsp Baking soda     -  2 tsp Sugar, ½ tsp Pepper
2 tsp Salt+1 tsp Rice vinegar                                       -  1 tsp 5-Spice powder
2 tbsp Rum & 1 tbsp Dark soy sauce (optional)      -  1 tsp Salt, 1 tsp Garlic powder

Directions
-   Rinse & pet dry the pork. Score the pork meat side lengthwise (± 1½ cm deep-don`t cut the skin). Each slash should be ± 2½ cm apart from each other.
-   Rub the meat part with the dry ingredients & dark soy sauce. Then brush the sides with rum.
-   Put the pork in a roasting rack; skin side up. Pet dry the skin. Poke the skin in several places & then brush it with salt+vinegar mixture. Store the pork uncovered in the fridge for at least 8 hours (overnight would be better).
-    Preheat the oven with top heat on or charcoal Bbq grill to 200° C.
*  Charcoal Bbq grill: Brush pork skin with vinegar mixture & brush pork meat with honey mixture. Put the pork in the Bbq grill; skin side up. Cover with the lid & grill/roast it for ± 45 mins (almost done). Take out the pork & stack/place a flat high roasting rack on top of the Bbq grill rack. The more distance to the flame U give, the less chance to burn the skin. Place the pork on the roasting rack; skin side down. Grill/Roast the pork until crispy & the core temperature reaches 68° C.
*  Oven: Put the pork (skin side down) in a rack & place it on a roasting pan. Add some water to the roasting pan. Brush pork meat with honey mixture. Put it all in the middle of oven rack & roast for ± 20 mins. Flip the pork over (skin side up). Pet dry the skin with a paper towel & poke it all over. Brush it with vinegar mixture. Roast for 15 mins. Take out the pork; wipe the skin from it`s fat. Add the baking soda into the vinegar mixture. Brush the skin with the vinegar mixture & then roast for 15-20 mins (until the skin becomes crispy). Remove from the oven & let it rest for 15 minutes. Slice the pork. Serve the crispy roasted pork with hoisin sauce or soya sauce with sliced bird`s eye chilies.
