Dendeng Batokok (Dried Beef with Green Chili Paste)

Bahan
Bhn Sambal:                                                                Bhn Daging:
12 Cabai hijau, 5 st Air kelapa, 2 st Garam   -  1 kg Daging paha sapi, 2 sm Air nipis
6 Bawang merah & 2 Daun jeruk-iris tipis        -  1 st Lada & 1½ sm Ketumbar-hlskan
1 Tomat hijau-ptg2, 1 st Gula, 6 Rawit           -  10 gr Jahe & 5 gr Lengkuas-hlskan
2 Baw.pth, 2 Kemiri & 1 cm Kunyit-hlskan       -  8 Baw. mrh & 4 Baw. pth-hlskan
½ st Air jrk limo, 2 sm Minyak sayur                -  Garam & Air seckpnya

Cara membuat
-   Potong2 daging setebal ± 1 cm, searah serat. Rebus ½ matang saja di air mendidih. Angkat & tiriskan. Pukul2 hingga tipis & melebar. Remas dng bhn lain, diamkan 1 jam.
-   Panggang daging di oven dng api atas 250° C selama ± 40-45 mnt (hingga garing & berwarna coklat). Dapat juga dng cara memanggang daging di atas bara arang.
-   Sambal: Tumbuk kasar cabai2, tomat & baw. mrh. Tumis bumbu hls dng minyak sayur di atas api sedang. Mskkan bumbu tumbuk kasar & daun jrk, goreng sebentar. Beri air kelapa, garam & gula, masak hingga rasa menyatu. Angkat, beri air limo, aduk rata.
-   Campurkan sambal dng daging seblm dihidangkan.

Ingredients
Chili paste:                                                                    Meat ingredients:
1 tsp Sugar, 6 Bird`s eye chilies, 2 tsp Salt   -  1 kg Top side beef, 2 tbsp Lime juice
6 Shallots & 2 Kaffir lime leaves-thinly sliced8 Shallots & 4 cloves Garlic-grind
1 Green tomato-cut, 5 tsp Coconut juice          -  1 tsp Pepper & 5 gr Galangal-grind
2 cloves Garlic & 1 cm Turmeric-grind               -  1½ tbsp Coriander-grind, Salt
2 Candlenuts-grind, 12 Green chilies                   -  10 gr Ginger-grind, Water
½ tsp Kaffir lime juice, 2 tbsp Vegetable oil

Directions
-   Slice the beef into ± 1 cm thick, lengthwise; then cook until ½ done in boiling water. Remove & drain the meat. Pound sliced beef lightly until becomes thin & rather wide. Squeeze the beef with other meat ingredients; let it stand for 1 hour.
-   Roast the meat in the oven 250° C over top heat ± 40-45 min (until it becomes brown & crispy). U could also use charcoal grill for this.
-   Chili Paste: Coarsely pound the chilies, tomato & shallots. Sauté ground spiced with vegetable oil over medium heat. Put in chilies mixture & lime leaves, fry for awhile. Put in coconut juice, salt & sugar; cook until the flavor blended. Remove from the heat, stir in kaffir lime juice.
-   Mix the meat & the chili paste before serving.
