Sate Babi/Sapi (Pork/Beef Satay)



In Indonesian & English

Bahan
500 gr Daging babi/sapi berlemak               -  75 ml Air, 1 sm Mentega-cairkan
½ st Asam, 7 sm Kecap mns, Garam          -  2 cm Lengkuas-prt, Minyak, Tsk sate
2 Jrk limau, 3 sm Kcp asin, 2 Dn jeruk    Haluskan:
30 gr Gula mrh-sisir, 1½ st Lada bbk        -  8 Baw.mrh, 4 Baw.pth, ½ st Jintan
2 st Cabai bbk, 1 Daun salam                      -  7 Kemiri, 2 cm Kunyit, 1 sm Ketumbar

Cara membuat
-   Tumis bumbu hls & lengkuas dng minyak. Mskkan 4 sm kecap mns, kcp asin, gula jawa, asam, 1 st lada, garam, air, cabai, daun jeruk & salam. Masak hingga saus mengental.
-   Ptg2 daging persegi, Remas2 dng saus. Tutupi wadah & simpan di kulkas 6-8 jam.
-   Ulasan: Campur 1½ sm saus perendam dng 3 sm kecap, ½ st lada, mentega & air limau.
-   Tusuk bbrp daging di setiap tusukan sate. Semir daging dng bumbu ulasan, bakar hingga berubah warna, balik sate, semir lagi dng bumbu ulasan, bakar hingga matang.

Ingredients
500 gr fatty Pork/Beef meat, Salt           -  1 tbsp Butter-melted, Frying oil
½ tsp Tamarind, 1½ tsp ground Pepper     -  2 cm Galangal-grated, Skewers
2 Kaffir lime, 3 tbsp salty Soy sauce      Pureed spices:
30 gr Brown sugar, 2 tsp Chili flakes       -  7 Candlenuts, 2 cm Turmeric
7 tbsp sweet Soy sauce, 1 Bay leaf         -  4 cloves Garlic, 1 tbsp Coriander
2 Kaffir lime leaves, 75 ml Water            -  8 Shallots, ½ tsp Cumin

Directions
-   Sauté pureed ingredients & galangal with little oil. Put in 4 tbsp sweet soy sauce, salty soy sauce, brown sugar, tamarind, 1 tsp pepper, salt, water, chili flakes, lime leaves & bay leaf. Cook until the sauce becomes rather thick.
-   Cut the meat into cubes; rub with the sauce. Cover the bowl & marinade in the fridge 6-8 hours. Remove the meat from the bowl. Thread meat chunks onto the skewers.
-   Basting mixture: Mix 1½ tbsp of marinade sauce with 3 tbsp sweet soy sauce, ½ tsp pepper, butter & kaffir lime juice.
-   Brush the meat with basting mixture; grill the satay until the meat color changed, then turn the satay over. Brush again the meat with basting mixture & grill the satay until the meat cooked.
