Ayam Isi Kukus Bumbu Tauco (Steam Stuffed Chicken with Fermented Soy Beans)

Bahan
-  1 Ayam utuh (1,2 kg), 2 sm Kecap mns    Isi:
-  5 sm Tauco, 1 st Lada, Garam seckpnya   -  250 gr Dn singkong-rebus, tiriskan & ptg2
Haluskan:                                                               -  2 Cabai hijau, 1 Baw.pth, 2 Kemiri-hlskan
-  4 Baw.pth, 2 Baw.mrh, 4 cm Jahe             -  2 Bawang mrh-belah 2, Garam, Minyak
-  2 Cabai hijau, 6 Cabai keriting

Cara membuat
-   Campur rata bumbu hls dng garam, lada, tauco & kecap. Kerat2 ayam di bbrp bagian kmd lumuri ayam secara menyeluruh (termsk bagian dalamnya) dng campuran tauco. Diamkan 30 mnt.
-   Isi: Tumis bumbu hls dng minyak. Campur daun singkong dng sisa bahan campuran tauco, garam & bumbu hls. Isikan daun singkong ke dlm lubang ayam, mskkan 1 potongan baw.mrh, isi lagi dng daun singkong, ulangi prosedur hingga daun & bawang habis. Jahit lubangnya.
-   Kukus ayam 30 mnt, balik posisi ayam, kukus lagi 25 mnt/sampai matang.

Ingredients
-  1,2 kg whole Chicken, 1 tsp Pepper    Filling:
-  5 tbsp Fermented Soy Beans, Salt      -  250 gr Cassava leaves-boiled, drained & sliced
-  2 tbsp Sweet Soy Sauce                        -  2 Shallots-cut into 2, Salt, Frying oil
Grind into a paste:                                      -  2 Green chilies, 1 clove Garlic, 2 Candlenuts
-  4 cloves Garlic, 2 Green chilies
-  6 Cayenne peppers, 2 Shallots, 4 cm Ginger

Directions
-   Combine the spices paste with salt, pepper, fermented soy beans & soy sauce. Make several slashes in the chicken & then rub it with the soy beans mixture chicken (incld. under the skin & inside part of the cavity). Let it stand for 30 mins.
-   Filling: Grind green chilies, garlic & candle nuts into a paste. Sauté ground spices with a little oil. Mix the cassava leaves well with the rest of soy beans mixture, salt & ground spices. Spoon some of the cassava leaves into the cavity of chicken, put in 1 piece of shallot, fill up again with leaves, repeat the procedure until all ingredients is off. Stitch up the chicken cavity.
-   Steam the chicken for 30 mins; turn the chicken over, steam for another 25 mins/until it`s cooked.
