Tahu Isi Sayuran Renyah (Crispy Vegetables Stuffed Tofu)

Bahan
-  4 Tahu, Air+Garam+2 Baw.pth hls, Minyak        Bahan Pelapis:
Bahan Isi:                                                                -  10 sm Terigu, 3 sm Tp.beras
-  2 Baw.pth-hlskan, 1 Wortel-ptg hls                   -  1 st Baking pwd, 1 sm Minyak grng
-  ½ B.bombay-cincang, 1 sm Terigu                       -  1 st Ketumbar, 1½ st Garam
-  1 Daun bawang-iris, 2 lbr Kol-iris hls                -  ½ st Lada, 200-250 ml Air es
-  3 sm Ayam cincang, ½ st Gula, 1 Telur              -  2 Dn.jeruk muda-iris kcl, ½ st Gula
-  2 sm Toge, 1 st Garam, 1 st Lada              -  1 st Kunyit bubuk

Cara membuat
-   Tahu dipotong jadi 2 btk persegi kmd masing2 dibelah 2 secara diagonal (btk segitiga). Rendam di campuran air garam & bawang pth hls ± 20 mnt. Tiriskan, goreng di minyak pns hingga kuning kecoklatan kecuali pd sisi yg akan diisi. Angkat & dinginkan. Iris tahu tanpa terputus di bagian tengah dari sisi yg tdk digoreng hingga kuning. Kerok bag. dlm tahu dng sendok kcl (btk kantung)
-   Isi: Tumis bombay & baw.pth. Mskkan ayam cincang, aduk hingga matang. Beri sayuran & bumbu2, aduk2 hingga layu. Beri terigu, aduk rata. Angkat & biarkan dingin. Beri telur, aduk rata.
-   Pelapis: Campur semua bhn (kec. dn. jrk) sampai rata & halus. Beri daun jrk iris, aduk.
-   Masukkan adonan isi pada kantung2 tahu dng sendok kcl, tekan ke bagian tengah agar isi padat & tidak keluar saat digoreng. Lumuri tahu dng bahan pelapis hingga tertutup rata. Pnskan minyak di deep fryer (wajan cekung dng minyak yg banyak) di atas api sedang. Goreng sampai kuning kecoklatan. Angkat, taruh di kertas penyerap minyak.

Ingredients
-  4 Tofus, Water+Salt+2cloves Garlic-grind, Oil      Coating ingredients:
Stuffing ingredients:                                                     -  10 tbsp Flour, 3 tbsp Rice flour
-  2 cloves Garlic-grind, 1 tsp Salt, ½ tsp Sugar       -  1 tsp Baking pwd, ½ tsp Pepper
-  ½ Onion-chopped, 1 Carrot-shredded, 1 Egg          -  1½ tsp Salt, 1 tsp Coriander pwd
-  1 Green onion-sliced, 2 tbsp Bean sprout                -  200-250 ml iced Water, ½ tsp Sugar
-  2 sheets Cabbage-thinly sliced, 1 tbsp Flour          -  2 Kaffir lime leaves-thinly sliced
-  3 tbsp ground Chicken, 1 tsp Pepper                        -  1 tbsp frying Oil, 1 tsp Turmeric pwd

Directions
-   Cut each piece of Tofu into 2 squares; cut each square diagonally into 2 triangles. Soak tofu in the water+salt+garlic mixture for ~ 20 min. Drain & then pan-fry the tofus in hot oil until golden browned on all sides except on 1 side for stuffing. Remove from the pan & let it cool. Cut a slit into the unbrowned side of the tofu. Scoop out the center of the tofu with a teaspoon (make a pocket). Being careful not to break the Tofu.
-   Stuffing: Saut√© the onion & garlic with a little frying oil. Put in the chicken, stir until cooked. Add in the vegetables & seasoning; cook until the vegetables wilted. Stir in the flour to combine. Remove from the heat & let it cool down. Add in the egg & stir them well.
-   Coating: Combine all coating ingredients (except the lime leaves), mix until smooth. Stir in the lime leaves.
-   Use a teaspoon to fill tofus pocket with the stuffing, press the stuffing down gently. Dip tofu in the coating to cover all. Preheat the oil in a deep fryer over medium heat. Fry the tofu in hot frying oil a few at a time until golden brown. Take the tofu out & drain them on a paper towels.
