Sambal Tauco (Chili Sauce with Soy Beans Paste)

Bahan
  • 4 sm Tauco asin, 75 ml Santan, 2 sm Minyak, 1 sm Gula
  • 1 Baw. putih-cincang, 1 Sereh-geprek, 2 Daun salam
  • 3 Baw. merah+5 Cabai hijau+3 Cabai rawit-iris halus
  • 1 st Air nipis, Garam (bila perlu)

Cara membuat
  • Tumis bawang2 & cabai2 hingga harum. Beri sereh, salam, tauco & gula, aduk hingga aroma menyatu.
  • Tuangi santan & air nipis. Masak hingga cairan berkurang & matang (bila krg asin beri garam).

Ingredients
  • 4 tbsp salty Soy beans Paste, 2 tbsp Oil, 1 tsp Lime juice
  • 75 ml Coconut milk, 1 Lemon grass-bruised, 2 Bay leaves
  • 1 Garlic clove-minced, 1 tbsp Sugar, Salt (if needed)
  • 3 Shallots+5 Green chilies+3 Bird`s eye chilies-sliced

Directions
  • Sauté shallots, garlic & chilies until fragrant. Add in lemon grass, bay leaves, soy beans paste & sugar. Stir until the flavor blended.
  • Pour in coconut milk & lime juice. Cook until the liquid reduced (add in salt if needed).

Tahu Isi Sayuran Renyah (Crispy Vegetables Stuffed Tofu)

Bahan
  • 4 Tahu ukuran besar, 2 Bawang putih-haluskanMinyak
  • Air & Garam secukupnya
Bahan Isi:
  • 2 Bawang putih-haluskan, 1 Wortel-serut halus, 1 Telur
  • 3 sm Ayam cincang, ½ Bawang bombay-cincang, 1 st Lada
  • 2 sm Toge, 1 Daun bawang-iris, 2 Daun Kol-iris halus
  • ½ st Gula, 1 st Garam, 1 sm Terigu
Bahan Pelapis:
  • 10 sm Terigu, 3 sm Tepung beras, 1 st Baking powder
  • ½ st Lada, 200-250 ml Air es, 1 sm Minyak goreng
  • 1 st Ketumbar, 1½ st Garam, 1 st Kunyit bubuk
  • 2 Daun jeruk-iris halus, ½ st Gula

Cara membuat
  • Tahu dipotong jadi 2 btk persegi lalu masing2 dibelah 2 secara diagonal (bentuk segitiga). Rendam di campuran air, garam & bawang putih halus selama 20 menit. Tiriskan, goreng di minyak panas hingga kuning kecokelatan & berkulit, kecuali pada sisi yang akan diisi. Angkat & dinginkan. Iris tahu tanpa terputus di bagian tengah dari sisi yangg tidak digoreng hingga kuning. Kerok bagian dalam tahu di sisi tersebut dengan sendok kecil (btk kantung)
  • Isi: Tumis bombay & bawang putih. Masukkan ayam cincang, aduk hingga matang. Beri sayuran & bumbu2, aduk2 hingga agak layu. Beri terigu, aduk rata. Angkat & biarkan dingin. Beri telur, aduk rata.
  • Pelapis: Campur semua bahan (kecuali daun jeruk) sampai rata & halus. Beri daun jeruk iris lalu aduk.
  • Masukkan adonan isi pada kantung2 tahu dengan sendok kecil, tekan ke bagian tengah agar isi padat & tidak keluar saat digoreng. Lumuri tahu dengan bahan pelapis hingga tertutup rata. Panaskan minyak di deep fryer (wajan cekung dengan minyak yang banyak) di atas api sedang. Goreng sampai kuning kecokelatan. Angkat, taruh di kertas penyerap minyak.

Ingredients
  • 4 firm Tofu, 2 Garlic cloves-grind, enough Water, Salt & Oil
Stuffing ingredients:
  • 2 Garlic cloves-grind, 1 tsp Salt, ½ tsp Sugar, 1 tbsp Flour
  • ½ Onion-chopped, 1 Carrot-shredded, 1 tsp Pepper, 1 Egg
  • 2 sheets Cabbage-thinly sliced, 3 tbsp ground Chicken
  • 1 Green onion-sliced, 2 tbsp Bean sprout
Coating ingredients:
  • 10 tbsp Flour, 3 tbsp Rice flour, 1 tsp Coriander powder
  • 200-250 ml iced Water1 tsp Baking powder, 1½ tsp Salt
  • 2 Kaffir lime leaves-thinly sliced1 tsp Turmeric powder
  • ½ tsp Sugar, ½ tsp Pepper, 1 tbsp frying Oil

Directions
  • Cut each piece of Tofu into 2 squares; cut each square diagonally into 2 triangles. Soak tofu in the water+salt+garlic mixture for ~ 20 minutes. Drain & then pan-fry tofu in hot oil until golden brown on all sides except on 1 side for stuffing. Remove from the pan & let it cool down. Cut a slit into the un-browned side of tofu. Scoop out the center of tofu with a teaspoon (make a pocket). Being careful not to break the Tofu.
  • Stuffing: Sauté the onion & garlic with a little frying oil. Put in chicken, stir until it's cooked. Add in vegetables & seasoning; cook until the vegetables are soften. Stir in the flour to combine. Remove from the heat & let it cool down. Add in egg & stir them well.
  • Coating: Combine all coating ingredients (except for the lime leaves), mix until it's smooth with no lumps. Stir in the lime leaves.
  • Use a teaspoon to fill up tofu's pocket with the stuffing, press the stuffing down gently. Dip tofu in the coating to cover all. Preheat oil in a deep fryer over medium heat. Fry tofu in hot frying oil a few at a time until golden brown. Take the tofu out & drain them on a paper towels.

Tempe Goreng Tepung (Flour Coating Fried Tempeh)

Bahan
  • 10 iris Tempe, 100 ml Air, ½ st Gula½ st Lada bubuk
  • 100 ml Air es, 5 sm Terigu, 3 sm Tepung beras
  • ½ st Baking powder, 1½ st Ketumbar bubuk
  • 1 Daun bawang-iris2 st Garam, Minyak goreng
  • ½ st Bawang putih bubuk, 2 Bawang putih-haluskan
  • 2-3 Daun jeruk-iris halus, 2 Cabai-iris (opsional)

Cara membuat
  • Campur air, bawang putih halus, 1 st garam, 1 st ketumbar. Rendam tempe di dalamnya ± 20 mnt. Tiriskan.
  • Campur tepung2, baking powder, ½ st ketumbar, 1 st garam, bawang putih bubuk, gula, lada. Tuangi 1 sm minyak goreng & air es sedikit2 sambil diaduk sampai halus. Beri daun bawang, daun jeruk & cabai, aduk.
  • Panaskan minyak yang banyak di atas api sedang. Masukkan tempe ke adonan tepung hingga tertutup rata. Goreng tempe hingga kuning kecokelatan.

Ingredients
  • 10 sliced Tempeh, 100 ml Water, ½ tsp ground Pepper
  • 5 tbsp Flour, 3 tbsp Rice flour, 2 Garlic cloves-grind
  • 1 Green onion-sliced, ½ tsp Sugar, 100 ml ice Water
  • 2-3 Kaffir lime leaves-thinly sliced2 tsp SaltOil
  • ½ tsp Baking powder, 1½ tsp ground Coriander
  • ½ tsp Garlic powder, 2 Chilies-sliced (optional)

Directions
  • Blend water, ground garlic, 1 tsp salt, 1 tsp coriander. Soak tempeh in the mixture for ~ 20 minutes & then drain them.
  • Combine all flour, baking powder, ½ tsp coriander, 1 tsp salt, garlic powder, sugar & pepper. Pour in 1 tbsp of frying oil & cold water a little at a time; stir until the mixture smooth with no lumps. Add in green onion, lime leaves & chilies, mix well.
  • Heat a lot of frying oil over medium heat. Dip tempeh in the batter until it cover all & then fry tempeh in hot oil until golden brown.

Soup Iga Sapi (Beef Ribs Soup)

Bahan
  • 1 kg Iga sapi berdaging tebal-potong2, 2 Prei-iris
  • 2 Star anis, 2 batang Seledri-ikat, 3 bh Kapulaga
  • 2 sm Air jeruk nipis, 5 Cengkeh, 10 Rawit (optional)
  • 2 cm Lengkuas-geprek, 1¾ lt Air, 1 Sereh-geprek
  • 1 st Gula, 250 gr Kentang-potong, Bawang goreng
  • 1 Tomat-potong, 300 gr Wortel-iris, 2 Daun salam
Haluskan:
  • 4 Bawang putih, 2 cm Jahe , 1½ st Pala, 1 st Lada
  • 8 Bawang merah, 3 Cabai merah, 1 sm Garam

Cara membuat
  • Rebus kentang. Sisihkan. Taburi iga dengan garam & lada, lalu goreng sampai kecokelatan.
  • Tumis bumbu halus. Rebus iga dengan bumbu halus, salam, lengkuas, cengkeh, star anis, kapulaga & seledri sampai dagingnya lunak. Buang bumbu2 kasar & seledrinya.
  • Beri air jeruk nipis, rawit & gula. Masak sampai bumbu meresap. Masukkan kentang rebus, prei, tomat & wortel, masak lagi sebentar. Taburi bawang goreng.

Ingredients
  • 1 kg Beef short ribs/cut5 Cloves, 2 Star anise
  • Asian celery-bundled/1 Celery rib, 1 tsp Sugar
  • 2 Bay Leaves, 10 Bird`s eye chilies (optional)
  • 2 tbsp Lime juice, 2 Leeks & 1 Tomato-sliced
  • 1¾ lt Water, 3 Cardamom pods, fried Shallots
  • 1 Lemon grass & 2 cm Galangal-bruised
  • 300 gr Carrot & 250 gr Potatoes-sliced
Grind into a paste:
  • 4 Garlic cloves, 8 Shallots, 3 Chilies, 1 tbsp Salt
  • 2 cm Ginger, 1 tsp Pepper, 1½ tsp ground Nutmeg

Directions
  • Boil potatoes until it's soften, drain & set aside. Sprinkle ribs with salt & pepper; then fry in hot oil until lightly brown. Set it aside.
  • Sauté the spices paste. Boil ribs with sautéed spices, bay leaves, galangal, cloves, star anise, cardamom & celery until the meat tender. Discard dried spices & celery.
  • Ass in lime juice, sugar & chilies. Cook until the flavor blended. Add in boiled potato, leeks, tomato & carrots. Cook for awhile. Sprinkle with fried shallots before serving.

Kalio Daging Padang (Padang Style Spicy Beef Curry)

Bahan
  • 500 gr Daging sapi-potong2, 400 ml Santan, 1 mata Asam
  • 100 ml Air kelapa, 3 Daun jeruk, 3 Daun salam, Minyak
  • 100 gr Kacang merah-rebus sampai setengah matang
  • 3 cm Lengkuas & 1 Sereh-geprek
Haluskan:
  • 10 Cabai merah, 5 Cabai keriting, 1 st Jintan2 st Gula
  • 8 Bawang merah, 4 Bawang putih, 5 Kemiri2 cm Jahe
  • 2 cm Kunyit2 st Ketumbar, 1 sm Garam1 Tomat

Cara membuat
  • Tumis bumbu halus dengan minyak hingga harum. Masukkan daging, aduk sampai berubah warna. Kecilkan api ke sedang.
  • Tuangi santan & air kelapa, beri lengkuas, sereh, asam, daun jeruk & salam. Didihkan & aduk sesekali. Kecilkan api ke sedang-rendah. Masak hingga santan berminyak. Masukkan kacang merah, masak hingga santan mengental & kacang empuk.

Ingredients
  • 500 gr Beef-sliced, 400 ml Coconut milk, 3 Bay leaves
  • 100 ml Coconut juice, 3 Kaffir lime leaves, 1 Tamarind
  • 3 cm Galangal & 1 Lemon grass-bruised, Frying oil
  • 100 gr Kidney beans-boil until half cooked
Grind into a paste:
  • 10 red Chilies2 cm Ginger, 8 Shallots, 4 Garlic cloves
  • 2 cm Turmeric, 2 tsp Coriander, 1 tsp Cumin, 1 Tomato
  • Cayenne peppers, 5 Candlenuts, 2 tsp Sugar, 1 tbsp Salt

Directions
  • Sauté ground spices with a bit oil until fragrant. Stir in the beef; cook until beef colour has changed & then reduce the heat to medium.
  • Pour in coconut milk & juice; add in galangal, lemon grass, tamarind, lime leaves & bay leaves. Bring it to a boil; stir occasionally. Reduce the heat to medium-low. Let it simmer until the gravy looks greasy. Put in beans; cook until the gravy thickens & the beans soften.

Ayam Bakar Padang (Minangese Grilled Chicken)

Bahan
  • 1 Ayam-potong jadi 8, 10 cm Kayu manis, 500 ml Santan
  • 5 Daun jeruk, 2 Sereh-geprek, 3 Cengkeh, 3 sm Minyak
  • 6 cm Lengkuas-parut
Haluskan:
  • 8 Bawang merah, 4 Bawang putih½ st Lada, 2 st Garam
  • ½ sm Ketumbar, 1 st Jintan, 3 cm Kunyit, 6 Cabai merah
  • 5 Kemiri, 3 cm Jahe½ st Adas manis2 Asam, 1 st Gula

Cara membuat

Ingredients
  • 1 Chicken-cut into 8, 3 Cloves, 2 Lemongrass-bruised
  • 500 ml Coconut milk, 5 Kaffir lime leaves, 3 tbsp Oil
  • 10 cm Cinnamon, 6 cm Galangal-grated
Grind into a paste:
  • 6 Red chilies*, 8 Shallots, 4 Garlic cloves1 tsp Cumin
  • ½ tbsp Coriander, 2 Tamarind½ tsp Anise, 2 tsp Salt
  • ½ tsp Pepper, 1 tsp Sugar, 3 cm Ginger, 5 Candlenuts
  • 3 cm Turmeric

Bakso Sapi (Indonesian Beef Meatballs)

Bahan
  • 250 gr Daging Sapi, 100 gr Ayam cincang, 2 Putih telur
  • 2 sm Bawang goreng½ st Baking powder/Baking soda
  • 105 gr Tepung tapioka*, ½ st Kaldu bubuk, 1½ st Garam
  • 3 Bawang putih-cincang & goreng, 1 st Lada bubuk
  • 2 sm Olive oil/Minyak, ½ st PalaAir-merebus, Air es

Cara membuat
  • Blender semua bahan (kec.air) sampai selembut pasta. Simpan tertutup di kulkas 1 jam.
  • Didihkan air di panci. Basahi tangan, taruh adonan di telapak. Kepalkan & tekan agar adonan klr dari antara jempol & telunjuk. Ptng membulat dng sendok. Celup sendok diair seblm digunakan. Mskkan bakso ke air mendidih, masak hingga mengapung, angkat kmd rendam sebentar dlm air es. Tiriskan bakso. Akan dihasilkan ± 35-37 butir bakso.
  • Bakso dapat disimpan di freezer untuk waktu lama. Rebus kembali bakso sebelum digunakan.
  • Dpt diganti dng Tp Sagu/Maizena. Ukuran sebanyak 1/4-1/3 nya dari berat daging, tergantung dari kekenyalan bakso yg ingin dihasilkan (saya memakai 1/3 nya)
  • Bakso dapat digunakan utk membuat bakso kuah/mie bakso maupun sebagai bahan untuk membuat berbagai hidangan, antara lain (klik pada link untuk melihat resep2nya): 

Ingredients
  • 250 gr ground Beef, 100 gr ground Chicken, Ice water
  • 1 tsp ground Pepper, 2 Egg whites, 2 tbsp Olive oil/Oil
  • ½ tsp Baking soda/Baking powder, ½ tsp Broth powder
  • 2 tbsp fried Shallots, 3 Garlic cloves-minced & fried
  • 105 gr Tapioca flour *½ tsp ground Nutmeg
  • 1½ tsp Salt, enough Water-for boiling

Directions
  • Grind all ingredients (with the exception of water) in a food processor into smooth paste. Cover & refrigerate it for 1 hour.
  • Boil water in a pot. Rub your hand with little bit water; put a handful of dough in your palm. Squeeze out a small portion of the dough, between index finger & thumb, to make a rounded ball shaped meatballs. Scoop out the balls dough with a watered spoon. Drop the balls into boiling water; boil until the meat balls floated & cooked; remove from water & soak in ice water for a while. Drain them. You`ll get ~ 35-37 meatballs.
  • You could store the beef meatballs in the freezer for quite long. Re-boil the meatballs before using it.
  • You can substitute it with Sago Flour/Corn starch. Measurement: 1/4-1/3 of the meat weight; it depends on the plasticity of the meatballs you want to produce (I use 1/3).
