Pelecing Kangkung (Spicy Vegetable Salad)


In Indonesian & English

Bahan
-  ½ st Air jrk limau, Minyak goreng    Bumbu halus I:
-  250 gr Kangkung, 2 Daun jeruk         -  10 Rawit merah, 3 Cabai merah
-  50 gr Kacang panjang, 50 gr Toge   -  1 st Terasi, 3 Kemiri, 5 Baw.mrh
-  3 sm Kacang tnh, 2 sm Kelapa prt   -  1 st Garam, 1 Tomat
Bumbu halus II:
-  1 Baw.putih, 1 cm Kencur, Gula
-  1 Cabai mrh, 1 Rawit, Garam

Cara membuat
-   Ptg2 kmd rebus kangkung & kacang panjang. Seduh toge dng air pns. Goreng kacang tnh. Tiriskan semua. Campur bumbu hls I dng 1 st minyak & limau. Campur kelapa dng bumbu hls II & daun jeruk kmd sangrai.
-   Atur sayuran & kacang di piring. Beri bumbu halus I & bumbu kelapa, aduk rata.

Ingredients
-  ½ tsp Kaffir lime juice, 50 gr Long beans  Grind into a paste I:
-  2 Kaffir lime leaves, 50 gr Bean sprouts    -  10 Bird`s eye chilies, 3 Red chilies
-  250 gr Water spinach, 3 tbsp Peanuts       -  3 Candlenuts, 5 Shallots, 1 Tomato
-  2 tbsp grated Coconut, Frying oil                 -  1 tsp Salt, 1 tsp Shrimp paste
Grind into a paste II:
-  1 clove Garlic, 1 cm Lesser Galangal, Salt
-  1 Red chili, 1 Bird`s eye chili, Sugar

Directions
-   Cut & then boil the water spinach & long beans. Soak beansprouts in boiled water. Fry the peanuts. Drain all. Mix spices paste I with 1 tsp frying oil & lime juice. Combine grated coconut, spices paste II & lime leaves; roast for awhile.
-   Place the vegetables & peanuts in serving plate. Add in spices paste I & roasted coconut; combine them with the vegetables well.
