Semur Daging Jawa (Javanese Beef Stew)



In Indonesian & English

Bahan
-  500 gr Daging sapi-ptg2, 600 ml Air -  2 st Garam, 4 Baw.mrh & 3 Baw.pth-hlskan
-  ½ Baw.bombay-iris, 4 sm Kecap mns   -  1 sm Air jrk lemon, 1 cm Lengkuas-geprek
-  1 Tomat bsr-ptg2, 2 Cabai mrh-iris   -  1 Pekak, 1 st Lada, 2 Kentang-ptg & goreng
-  2 Daun salam, 4 sm Minyak goreng     -  2 st Pala, 5 cm Kayu manis, 3 Cengkeh

Cara membuat
-   Tumis cabai, bawang mrh, putih & bombay sampai harum. Tuang air di panci berdsr tebal, masukkan tumisan, daging, lengkuas, salam, pekak, kayu mns, cengkeh, lada & pala. Masak hingga bumbu meresap kmd mskkan kecap mns, garam, air lemon & tomat.
-   Masak & didihkan dng api kecil sampai daging empuk. Mskkan kentang goreng, aduk rata. Angkat dari api, buang daun salam, pekak, cengkeh, kayu manis & lengkuasnya.

Ingredients
-  500 gr Beef-cut, ½ Onion-sliced          -  4 Shallots & 3 cloves Garlic-grind
-  2 Bay leaves, 4 tbsp sweet Soy sauce -  1 tbsp Lemon juice/Vinegar, 2 tsp Salt
-  1 large Tomato-cut, 600 ml Water     -  1 Star anise, 2 Potatoes-cut & fried
-  1 cm Galangal-crushed, 1 tsp Pepper   -  2 tsp Nutmeg, 5 cm Cinnamon, 3 Cloves
-  2 Red chilies-sliced (optional)                -  4 tbsp cooking Oil

Directions
-   Saute the onion, chilies, shallots, garlic until fragrant. Pour water into a heavy bottom pan, add in sautéed ingredients, beef, galangal, bay leaves, star anise, cinnamon, cloves, pepper & nutmeg. Cook until the flavor blended & then put in soy sauce, salt, lemon juice & tomato.
-   Simmer on low heat until the meat is tender. Add in fried potatoes, stir well. Remove from heat; discard the bay leaves, star anise, cloves, cinnamon & galangal.
