Semur Daging Jawa (Javanese Beef Stew)

Bahan
  • 500 gr Daging sapi-potong2, 600 ml Air, 2 Daun salam
  • ½ Bawang bombay-iris, 4 sm Kecap manis, 4 sm Minyak
  • 2 st Pala bubuk, 1 Tomat besar-iris25 cm Kayu manis
  • 1 Pekak, 4 Bawang merah & 3 Bawang putih-haluskan
  • 1 sm Air lemon, 1 cm Lengkuas-geprek, 3 Cengkeh
  • 2 Kentang-potong2 lalu goreng, 2 Cabai merah-iris
  • 2 st Garam, 1 st Lada bubuk

Cara membuat
  • Tumis cabai, bawang yang dihaluskan & bombay sampai harum. Tuang air di panci berdasar tebal, masukkan tumisan, daging, lengkuas, salam, pekak, kayu manis, cengkeh, lada & pala. Masak hingga bumbu meresap lalu masukkan kecap manis, garam, air lemon & tomat.
  • Masak & didihkan dengan api kecil sampai daging empuk. Beri kentang goreng, aduk rata. Angkat dari api, buang daun salam, pekak, cengkeh, kayu manis & lengkuasnya.

Ingredients
  • 500 gr Beef-sliced, ½ Onion-sliced, 2 tsp Salt4 tbsp Oil
  • 1 Star anise, 1 cm Galangal-bruised, 1 big Tomato-sliced
  • 1 tbsp Lemon juice, 2 tsp ground Nutmeg, 600 ml Water
  • 2 Potatoes-sliced & fried, 3 Cloves1 tsp ground Pepper
  • 2 Bay leaves, 4 tbsp sweet Soy sauce, 5 cm Cinnamon
  • 4 Shallots & 3 Garlic cloves-grind, 2 Chilies-sliced (optional)

Directions
  • Saute onion, chilies, shallots & garlic until fragrant. Pour water into a heavy bottom pan; add in sautéed ingredients, beef, galangal, bay leaves, star anise, cinnamon, cloves, pepper & nutmeg. Cook until the flavor blended. Add in soy sauce, salt, lemon juice & tomato.
  • Simmer on low heat until the meat is tender. Add in fried potatoes, stir well. Remove from heat; discard the bay leaves, star anise, cloves, cinnamon & galangal.
