Daging/Ayam Gulai Lemak (Malay Style Dried Beef/Chicken Curry)


In Indonesian & English

Bahan
-  500 gr Daging Sapi/Ayam-ptg2 4-5 cm      Haluskan:
-  1½ st Gula mrh, 800 ml Santan, 2 Asam    -  8 Baw.mrh, 4 Baw.pth, 1 st Lada
-  100 gr Kelapa prt-sangrai & tumbuk hls      -  1 st Ketumbar, 6 Rawit merah
-  1 Sereh & 5 cm Lengkuas-geprek, Minyak  -  6 Kemiri, 6 Cabai mrh, ½ st Jintan
-  3 Daun Jeruk, 2 Salam, 2 Kentang-ptg2     - 2 cm Kunyit, 1 cm Jahe
-  2 st Garam, Bawang goreng

Cara membuat
-   Tumis bumbu hls sampai harum. Mskkan daging, asam, gula mrh, daun jeruk & salam, aduk hingga daging berubah warna.
-   Mskkan santan, garam, sereh & lengkuas. Masak hingga santan berminyak. Mskkan kelapa prt & kentang, masak sambil sesekali diaduk hingga kuah mengental & hampir mengering. Sajikan dng taburan bawang goreng.

Ingredients
-  500 gr Beef/Chicken-cut into 4-5cm chunks      Grind into a paste:
-  1½ tsp brown Sugar, 2 Tamarind, Frying oil         -  6 Candlenuts, 1 tsp Pepper
-  100 gr grated Coconut-roasted & grind                -  8 Shallots, 6 Birds eye chilies
-  1 Lemon grass & 5 cm Galangal-bruised                -  4 cloves Garlic, 2 cm Turmeric
-  3 Kaffir lime leaves, 2 Bayleaves, 2 tsp Salt      -  ½ tsp Cumin, 6 red Chilies
-  800 ml Coconut milk, 2 Potatoes-cut                    -  1 cm Ginger, 1 tsp Coriander
-  Deep fried Onions

Directions
-   Sauté the spices paste until fragrant. Add in beef, tamarind, brown sugar, kaffir lime leaves & bay leaves. Stir well until beef colour change.
-   Put in coconut milk, salt, lemon grass & galangal. Cook until the sauce becomes greasy. Add in grated coconut & potatoes, stir occasionally. Cook until the sauce thicker & almost dry. Serve with deep fried Onions.
