Soufflé Brokoli (Broccoli Soufflé)




In Indonesian & English

Bahan
-  300 gr Brokoli cincang, 60 gr Mentega     -  ¼ st Cabai bubuk, ¼ Baw.bombay-iris
-  60 gr Keju Parmesan prt, 40 gr Terigu     -  1 st Baw.pth cincang, ½ st Pala
-  6 Kng telur-kck, 6 Pth telur, ½ st Lada   -  375 ml Susu+100 ml Krim, ½ st Garam
-  40 gr Bacon-iris, ¼ st Cream of Tartar   -  1 Cabai bulat-iris (opsional)

Cara membuat
-   Lelehkan 2 sm mentega; tumis baw pth, bombay, bacon, cabai blt, brokoli hingga harum. Sisihkan.
-   Lelehkan sisa mentega di pan, mskkan terigu & masak di api medium 2 mnt sambil diaduk. Tuangi susu, aduk hingga lembut. Beri keju, garam, lada, pala & cabai bbk sambil terus diaduk.
-   Angkat dari api, mskkan kuning telur per 1 sendok sambil diaduk. Beri brokoli-bacon. Sisihkan. Kocok cream of Tartar & putih telur sampai kaku. Mskkan 1/3 bagian pth telur ke dlm adonan brokoli, aduk dng gerakan spt melipat2 perlahan (jangan dikocok/diputar). Teruskan memskkan pth tl per 1/3 bagian, aduk melipat perlahan2.
-   Pnskan oven 180°C. Tuang adonan kedlm 8 cup soufflé yg sdh diminyaki, panggang 25-30 mnt.

Ingredients
-  300 gr chopped fresh Broccoli                 -  ¼ tsp Cream of Tartar, ½ tsp Salt
-  60 gr grated Parmesan cheese                 -  1 tsp minced Garlic, 40 gr Flour
-  6 Eggs whites, ¼ Onion-chopped             -  375 ml Milk+100 ml Cream, 60 gr Butter
-  ¼ tsp Cayenne pepper pwd                         -  1 Bell pepper-sliced (optional)
-  6 Egg yolks-beaten, ½ tsp Nutmeg         -  40 gr minced Bacon, ½ tsp Pepper

Directions
-   Melt 2 tbsp butter; sauté onion, garlic, bacon, bell pepper, broccoli until fragrant; set aside.
-   Melt the rest of butter in saucepan, stir in flour & cook over medium heat for 2 min. Pour in milk, stir until smooth. Add in cheese, salt, pepper, cayenne pepper & nutmeg; stir constantly.
-   Remove from the heat; add egg yolks a spoon at a time, stir constantly. Put in broccoli-bacon. Set aside. Beat cream of Tartar with egg whites until stiff. Add 1/3 of the egg whites mixture into the broccoli, folding gently. Continue to add the whites by thirds, folding very gently.
-   Preheat oven to 180° C. Pour batter into 8 greased soufflé cup, bake for 25-30 min.
