Empal sapi Jawa (Javanese Bruised Fried Meat)

Bahan
1 kg Daging paha sapi, 5 D. salam      Haluskan:
2 Sereh & 5 cm Lengkuas-geprek        -  12 Baw merah, 6 Baw putih, 8 Kemiri
3 st Garam, Minyak goreng                   -  2½ sm Ketumbar, 2 st Garam, 2 Asam
2 lt Air, 100 ml Air Kelapa/Santan     -  1 cm Jahe, 3 sm Gula jawa, 1 st Jintan

Cara membuat
-   Rebus daging secara utuh dng salam, sereh, lengkuas & garam sampai empuk. Angkat daging lalu potong2 sesuai seratnya ± 5X4X1½ cm. Pukul2 hingga melebar.
-   Tumis bumbu hls. Campur bumbu hls dng 400 ml air & air klp/santan. Siram dlm daging. Aduk & simpan semalam dikulkas. Tiriskan daging, goreng di minyak panas hingga kering kecoklatan.

Ingredients
1 kg Top side beef, 5 Bay leaves         Grind into a paste:
2 Lemongrass, 5cm Galangal-bruised    -  12 Shallots, 6 cloves Garlic, 8 Candlenuts
100 ml Coconut juice/Coconut milk       -  2½ tbsp Coriander, 1 tsp Cumin, 2 Tamarind
3 tsp Salt, 2 lt Water, Frying fat      -  1 cm Ginger, 3 tbsp Coconut sugar, 2 tsp Salt

Directions
-   Boil the meat without slicing together with bay leaves, lemon grass, galangal & salt until tender. Remove the meat & cut into ± 5X4X1½ cm chunks. Bruise the meat until it is slightly widened.
-   Sauté spices paste. Mix sautéed spices with 400 ml water & coconut milk/juice. Pour the mixture into the meat. Mix well & keep it for min. 8 hours in fridge. Drain the meat; deep fried in hot frying oil until nicely brown; then drain on paper towels.
