Sayur Lodeh (Javanese Vegetables Stew)



In Indonesian & English

Bahan
-  200 gr Daging, 100 gr Tempe    -  2 Daun salam, 2 cm Lengkuas, 750 ml Air
-  1 Wortel, 25 gr Rebung-iris      Haluskan:
-  3 Cabai, 5 Kacang panjang          -  5 Bawang mrh, 2 cm Kunyit, 1 cm Kencur
-  ½ Terong ungu, ½ Labu siam        -  2 Bawang putih, 2 st Gula jawa
-  4 lbr Kol, 250 ml Santan             -  2 st Ketumbar, 2 st Garam, 1 st Lada

Cara membuat
-   Potong sayuran proporsional. Tempe dipotong dadu. Rebus daging, terong, labu, daun salam, lengkuas dng air secukupnya sampai empuk & air berkurang. Sisihkan. Tumis bumbu halus.
-   Masukkan dalam rebusan daging. Masukkan sayuran lain & tempe. Masak sampai sayuran agak layu. Beri santan dan aduk hingga santan matang. Lbh enak bila dimakan keesokan harinya.

Ingredients
-  200 gr Beef, 5 Long beans                -  ½ Eggplant, 2 cm Galangal, 750 ml Water
-  1 Carrot, 25 gr Bamboo sprout          Grind into a paste:
-  3 Chilies, 100 gr Tempeh-dice cut    - 5 Shallots, 1 cm Lesser Galangal, 2 tsp Salt
-  250 ml Coconut milk, ½ Chayote         -  2 cloves Garlic, 2 tsp Brown/Coconut sugar
-  4 sheets Cabbage, 2 Bay leaves         -  2 tsp Coriander, 2 cm Turmeric, 1 tsp Pepper

Directions
-   Cut all vegetables & meat. Sauté spices paste; set aside. Boil the meat, eggplant, chayote, bamboo sprout, bay leaves & galangal  in water until the meat tender & the water reduced.
-   Put in sautéed spices, other vegetables, chilies & tempeh. Pour in coconut milk; simmer until all are cooked. The dish will taste better when you cooked it a night in advance before serving.
