Nasi Ayam Hainan (Hainanese Chicken Rice)

Bahan
Bahan Nasi Hainan:                  Bahan Kuah:
-  500 gr Beras, 600 ml Kaldu ayam   -  2 cm Jahe & 2 Baw. pth-hlskan, 1 st Lada bbk
-  ½ Baw.bombay-cincang, Garam         -  1100 ml Air+3 st Kaldu ay, 2 Caisim-ptg, Garam
-  2 Cengkeh, 2 sm Mnyk wijen            -  2 Daun bawang-iris, 2 sm Kcp asin, Minyak
-  3 Baw.pth-hlskan, 2 sm Minyak       Bahan Ayam:
-  1 cm Jahe parut, 1 st Lada bbk     -  500 gr Dada/Paha ayam, 1 sm Kcp asin
-  ½ st Pala, 1 sm Angciu (optional)    -  2 cm Jahe & 1 Baw. pth-hlskan, Garam
Bahan Sambal:                                         -  1 sm Mnyk wijen, 1 st Lada bbk
-  1 Bawang mrh-iris, 2 tetes Cuka     Bahan Saus:
-  1 Bawang pth-cincang, Garam          -  1 st Jahe prt, 1 Baw.pth-cincang
-  5 Cab. keriting-iris, 2 sm Kaldu      -  2 sm Kecap asin+1 st Mnyk wijen
 
Cara membuat
-   Ayam: Campur bhn ayam kec minyak wijen. Kerat2 ayam lalu lumuri ayam dng bahan tsb, kmd kukus matang, angkat & ulasi dng minyak wijen.
-   Kuah: Tumis baw pth+jahe. Didihkan air+kaldu bersama tumisan, lada, garam, kcp asin. Ambil 2 sm kuah utk sambal. Sisa kuah beri dn bawang+caisim. Rebus lagi sebentar.
-   Nasi Hainan: Tumis baw.pth, jahe & bombay dng minyak. Campur tumisan dng semua bahan nasi (kec minyak wijen), masak di rice cooker sampai matang. Beri minyak wijen, aduk rata.
-   Sambal: Campur semua bahan, tekan2 dengan sendok. Saus: Campur semua bahan.
-   Letakkan nasi di piring saji. Makan dng ayam, kuah, sambal & saus.
 
Ingredients
Rice ingredients:                                          Soup ingredients:
-  1 tbsp Chinese rice wine (optional)      -  1100 ml Water+3 tsp Chick.broth pwd, Salt
-  2 tbsp Frying oil, 1 cm Ginger-grind  -  2 cloves Garlic-grind, Frying oil, 1 tsp Pepper
-  600 ml Chicken broth, 2 Cloves           -  2 cm Ginger-grind, 2 Green onion-sliced
-  2 tbsp Sesame oil, ½ Onion-minced     -  2 Green mustard cabbage, 1 tbsp Soy sauce
-  3 cloves Garlic-grind, 500 gr Rice      Chicken ingredients:
-  ½ tsp ground Nutmeg, Salt                    -  500 gr Chicken breast/thighs, 1 tsp Pepper
-  1 tsp ground Pepper                                -  2 cm Ginger & 1 clove Garlic-grind, Salt
Chili:                                                               -  1 tbsp Soy sauce, 1 tbsp Sesame oil
-  2 drops Vinegar, 5 Chilies-sliced         Sauce ingredients:
-  1 clove Garlic-minced, Salt                   -  1 clove Garlic-minced, 1 tsp grated Ginger
-  1 Shallots-sliced, 2 tbsp Broth            -  2 tbsp Soy sauce+1 tsp Sesame oil
 
Directions
-   Chicken: Combine all chicken ingredients with the exception of sesame oil. Make deep slashes on the chicken surface & then rub the chicken with the mixture. Steam until the chicken cooked. Remove from the steamer & brush them with sesame oil.
-   Soup: Sauté the garlic & ginger. Boil the water with sautéed spices, salt, pepper, soy sauce & broth. Take 2 tbsp to mix with the chili. Put in sliced green onion & green mustard cabbage, cook for awhile.
-   Rice: Sauté the garlic, ginger & onion with oil. Combine sautéed ingredients with all of rice ingredients (with the exception of sesame oil), cook them with rice cooker. Add in sesame oil & combine well.
-   Chili: Mix all ingredients, stir & press them with a spoon. Sauce: Mix all ingredients.
-   Place rice in serving plate. Eat the Hainan rice with the chicken, soup, chili & sauce.
