Tempe Penyet (Bruised Fried Tempeh in Chili Paste)

Bahan
150 gr Tempe-ptg2 uk. 4x5x1 cm            Bahan Sambal:
1 Baw.pth-hlskan, 250 ml Air Kaldu         -  5 Cabai merah, 1 st Garam
1 st Ketumbar, 1 st Air jeruk limau         -  10 Rawit, 2 Bawang putih
7 lbr Kemangi-iris, 2 Daun jeruk               -  4 Bawang merah, 1 st Terasi
1 Daun bawang-iris, 2 st Garam                -  1 Tomat, ½ st Gula

Cara membuat
-   Campur kaldu, bawang putih, garam & ketumbar. Rendam tempe di kaldu selama 1 jam. Tiriskan & goreng kering.
-   Ulek kasar bahan sambal. Tumis sambal & daun jeruk. Mskkan daun bawang, aduk rata. Matikan api, beri air jeruk limau & irisan kemangi, aduk.
-   Susun tempe di piring saji, beri sambal, penyet2 tempe dng ulekan/sendok.

Ingredients
150 gr Tempeh-sliced 4x5x1 cm                       Spicy paste ingredients:
1 Garlic-grind, 250 ml Chicken broth              -  10 Cayenne Pepper, 4 Shallots
1 Green onion-cut, 1 st Kaffir Lime juice      -  1 tsp Shrimp paste, 1 tsp Salt
7 Lemon basil leaves-sliced, 2 tsp Salt           2 cloves Garlic, 1 small Tomato
2 Kaffir lime leaves, 1 tsp Coriander pwd      -  5 Red Chilies, ½ tsp Sugar

Directions
-   Mix chicken broth, ground garlic, salt & coriander. Soak the tempeh in chicken broth mixture for 1 hour. Drain & then fry the tempeh until golden brown.
-   Roughly crush spicy paste ingredients. Sauté the paste & lime leaves. Add in green onion & lemon basil leaves. Turn off the heat, stir in kaffir lime juice & fried tempeh.
-   Using a mortar/big spoon; gently pound the tempeh to slightly bruise them.
