Pastel Tutup (Stuffed Potato Casserole)

Bahan Isi:                                                                            Bahan lain:
- 250 gr Daging cncng, 50 gr Soun-seduh air pns    - 1½ kg Kentang-kukus kmd hlskan
- 150 ml Air+2 st Kaldu bubuk*, 100 gr Ercis          - 75 gr Mentega, 100 ml Susu
- 4 Bawang merah-hlskan, 2 Daun Salam                    - 100 ml Krim, ½ st Pala bbk
- ½ Baw. Bombay-cincang, 1 st Lada, 1½ st Pala     - ½ st Lada bbk, 1½ st Garam
- ½ Wortel & 10 Buncis-ptg kecil, 3 sm Mentega   - 1 Kng telur, 100 gr Keju prt
- 25 gr Jamur kuping-iris2, 1½ st Jintan
- 3 Bawang putih-hlskan, 1 st Gula, 2 st Garam

Cara membuat
-   Aduk mentega & kentang saat masih panas, aduk rata, beri susu, krim, bumbu2 aduk.
-   Isi: Tumis bawang2 dng mentega, masukkan daging & salam, tuangi kaldu, masak hingga daging matang. Beri wortel, buncis, jamur, bumbu2 & soun, masak hingga air terserap. Buang daun salam.
-   Olesi Loyang dng mentega. Mskkan & ratakan bhn kentang menutupi dasar & pinggiran loyang (tebal ± 1½ cm), beri bahan isi sampai ¾ tingginya. (* Bila suka pastel tutup dng kuah agak banyak, tuangi lagi sedikit kaldu). Tutup rapat bagian atas dng bhn kulit. Oles permukaan dng kng telur, taburi keju parut. Garis2 permukaannya dng garpu. Panaskan oven 180°C, panggang selama 30-40 mnt.

- 250 gr Minced Beef, 1½ st Nutmeg pwd           - 1½ kg Potatoes-steamed, mashed
- 150 ml Water+2 tsp Beef broth pwd*               - 75 gr Butter, ½ tsp Nutmeg pwd
- 4 Shallots-grind, 2 Bay leaves                             - 100 ml Cream, 1½ tsp Salt
- ½ Onion-chopped, 50 gr Mung Bean Thread     - 100 ml Milk, ½ tsp Pepper pwd
- ½ Carrot & 10 Beans-thinly cut, 1 tsp Sugar  - 1 Egg yolk, 100 gr grated Cheese
- 25 gr Cloud ear fungus-cut, 1½ tsp Cumin
- 100 gr Green peas, 3 Garlic cloves-grind
- 1 tsp Pepper, 2 tsp Salt, 3 tbsp Butter

Directions
-   Combine well the butter with mashed potatoes while it`s still hot. Pour in the milk, cream & seasoning, stir well.
-   Filing: Soaked the mung bean thread (also when u use dried cloud ear fungus) in hot water for awhile & then drain. Sauté the onion, shallots & garlic with butter, add in meat & bay leaves, pour in broth & simmer until the meat cooked. Put in carrot, beans, fungus, mung bean thread & seasoning. Cook until the broth absorbed; discard the bay leaves.
-   Greased the baking dish with butter. Place the mashed potatoes into the dish & press it to cover the bottom & all side of the dish (± 1½ cm thick). Put in the filling until ¾ the height of the dish. (* If you like it to be a bit wet later on, you can pour in some beef broth). Cover the top side of it with mashed potatoes. Brush the potatoes surface with egg yolks, sprinkle with grated cheese. Make lines on the surface using a fork. Preheat the oven 180°C, bake for 30-40 mins.
