Fu Yung Hai (Egg Fu Yung)

Bahan
Bahan utama:                                  Saus:
- 1 klg Dng Kepiting/120 gr Ayam cincang    - 1 Bawang putih-hlskan, 150 ml Kaldu
- ½ cup Bunga kol & Rebung, cincang                -  1 sm Pasta tomat, 1 sm Saus tomat
- 3 Daun bawang, 1 Bombay kcl, iris                -  1 sm Saus tiram, Paprika/Cabai mrh-iris
- 2 Bawang putih-hlskan, 5 st Terigu               -  3 st Gula, ½ st Maizena+1 sm Air
- ½ st Pala bbk, ½ st Lada bbk, 4 Telur         -  ½ sm Minyak wijen, ¼ Wortel-iris
- 1 st Minyak wijen, ½ st Garam                       -  ½ st Grm, ½ st Lada, 1 sm Saus hoisin

Cara membuat
-  Kocok telur sampai naik. Campur rata semua bhn utama. Panaskan minyak dng api sedang di penggorengan, tuang adonan hingga terbtk dadar. Masak hingga matang kecoklatan di dua sisinya, angkat.
-  Saus: Tumis bawang pth, tambahkan kaldu & didihkan. Tambahkan wortel, paprika/cabai & semua bahan saus (kecuali maizena & minyak wijen). Setelah matang, beri maizena & minyak wijen, aduk hingga saus mengental. Siram di atas dadar seblm dihidangkan.

- 1 can Crabs meet/120 gr minced Chicken   -  1 Garlic clove-grind, ½ tsp Salt
- ¼ cup Cauliflower-finely chopped                   -  150 ml Chicken broth, ½ tsp Pepper
- ¼ cup Bamboo sprouts-sliced                          -  1 tbsp Tomato paste, 1 tbsp Tomato sauce
- 3 Green onion & 1 small Onion-sliced           -  1 tbsp Oyster sauce, ½ tbsp Sesame oil
- 2 Garlic clove-grind, 5 tsp Flour                   -  1 tbsp Hoisin sauce, Sliced Paprika/Chili
- ½ tsp Nutmeg pwd, ½ tsp Pepper pwd          -  ¼ Carrot-thinly sliced, 3 tsp Sugar
- 1 tsp Sesame oil, ½ tsp Salt, 4 Eggs           -  ½ tsp Corn starch+1 tbsp Water

Directions
-  Beat the Eggs until fluffy. Mix well all main ingredients together. Heat frying oil in a medium size frying pan over medium heat, put in the batter & make a thick omelette. Fry omelette until golden brown on both side.
-  Sauce: Sauté ground garlic, pour in chicken broth, simmer for 3 mins. Put in carrot, paprika/chili & all sauce ingredients (with the exception of corn starch & sesame oil). Pour in sesame oil & corn starch, stir until the sauce becomes thick. Pour the sauce over the omelette before serving.
