Brongkos Daging (Javanese Dark Beef Stew with Coconut Milk)


In Indonesian & English

Bahan
½ kg Daging tetelan-ptg, 5 Daun jeruk          -  400 ml Santan, 50 gr Rawit, 300 ml Air
½ kg Kacang tolo-rebus, 2 Daun salam           Haluskan:
1 Labu siam-ptg dadu, 1 genggam Kerecek   -  10 Baw.merah, 7 Baw.putih, 2 cm Jahe
2 Tahu-ptg dadu kecil & goreng ½ kering      -  2 st Garam, 4 Cabai merah, 10 Kemiri
5 Kluwak, 2 cm Lengkuas & 2 Sereh-geprek2 cm Kunyit, 1 sm Ketumbar
5 rimpang Jahe merah/sunti-parut (opsion)  -  2 sm Gula jawa, 5 cm Kencur

Cara membuat
-   Pecahkan kluwak, ambi isinya. Rendam dng air hangat hingga agak empuk, tiriskan kmd hlskan. Tumis bumbu hls. Mskkan kluwak, jahe sunti, lengkuas, sereh, dn jeruk. Aduk hingga harum
-   Masukkan air & santan, garam, daging, labu, rawit & kacang tolo. Kecilkan api, aduk terus agar santan tak pecah sampai semua matang. Mskkan tahu & kerecek, masak hingga kuah berkurang.

Ingredients
½ kg Flanks meat-cut, 5 Kaffir lime leaves           -  5 pcs Red Ginger-grated (optional)
½ kg Black eyed peas-boil, 300 ml Water              Grind into a paste:
1 handful of Skin crackers, 5 Kluwak nuts            -  10 Shallots, 7 cloves Garlic
2 Tofus-dice cut & fried ½ cooked                          -  2 cm Ginger, 2 tbsp Coconut sugar
400 ml Coconut milk, 1 Chayote-dice cut              -  2 cm Turmeric, 1 tbsp Coriander
2 cm Galangal & 2 Lemongrass-bruised                   -  4 Red chilies, 10 Candlenuts
2 Bay leaves, 50 gr Bird`s eye chilies (optional)  -  2 tsp Salt, 5 cm Lesser Galangal

Directions
-   Break the kluwak shells & take the nuts out. Soaked it in warm water until softened. Drain & then grind the nuts. Sauté ground spices. Stir in kluwak, red ginger, galangal, lemongrass & lime leaves until fragrant
-   Put in the water, coconut milk, salt, meat, chayote, bird`s eye chilies & peas. Reduce the heat to low, stir constantly until all are cooked. Put in the tofus & crackers, cook until the gravy reduced.
