Tahu Goreng Tepung (Flour Coating Fried Tofu)


In Indonesian & English

Bahan
10 iris Tahu, 50 ml Air, 1 st Garam      Bhn Pelapis Alternativ I:
2 Bawang pth-hlskan, ½ st Lada bbk       -  50 gr Terigu, 2 sm Tepung beras
1 st Ketumbar bbk, Minyak goreng          -  1 st Tepung tapioka, 125 ml Air es
Bhn Pelapis Alternativ II:                              -  100 gr Panir, ½ st Baking powder
100 gr Tpg beras+1 sm Tpg.sagu             -  1 Baw putih & 1 Baw merah-haluskan
1 cm Kencur & 2 Baw.pth-hlskan             -  1 Telur-kck, 1 st Grm, ½ st Kaldu bbk
3 Kemiri-hlskan, 1 st Ketumbar bbk       -  1 Daun baw.-iris, 1 st Ketumbar bbk
2 sm Santan, 1 st Grm, 100 ml Air       -  2-3 D. Jeruk muda-iris hls, ½ st Lada

Cara membuat
-   Campur air, bawang putih, garam, ketumbar & lada. Masukkan tahu. Diamkan 20 menit. Tiriskan.
-   Alternativ I: Campur tepung2 (kec. panir), baking powder, telur, bumbu hls, kaldu, garam & lada. Beri daun bawang & daun jeruk, aduk. Tuangi air es sedikit2 sambil diaduk. Masukkan tahu ke bahan celupan, gulingkan di panir. Goreng hingga kuning kecoklatan.
-   Alternativ II: Campur tepung2 dng bumbu hls, garam & ketumbar. Beri santan & air, aduk rata. Masukkan tahu ke bahan celupan, goreng hingga kuning kecoklatan.

Ingredients
10 sliced Tofus, 50 ml Water                     Coating ingredients alternative I:
2 cloves Garlic-grind, ½ tsp Pepper            -  50 gr Flour, 2 tbsp Rice flour
1 tsp Coriander, 1 tsp Salt, Frying fat    -  1 tsp Tapioca flour, 1 tsp Salt
Coating ingredients alternative II:                 -  ½ tsp Baking pwd, ½ tsp Pepper
100 gr Rice flour+1 tbsp Sago flour          -  1 clove Garlic & 1 Shallot-grind
3 Candlenuts & 2 cloves Garlic-grind          -  1 Egg-beaten, 125 ml cold Water
1 cm Lesser galangal-grind                            1 Green onion-cut, 1 tsp Coriander
100 ml Water, 2 tbsp Coconut milk           2-3 Kaffir lime leaves-sliced
1 tsp Coriander pwd, 1 tsp Salt                  -  ½ tsp Broth pwd, 100 gr Breadcrumbs

Directions
-   Blend water, garlic, salt, coriander & pepper. Soak tofus in the mixture ± 20 mins; drain them.
-   Alternative I: Mix flours (with the exception of breadcrumbs), bak. powder, egg, ground spices, broth, salt & pepper. Add in green onion & lime leaves, mix well. Pour in cold water a little at a time; stir constantly. Dip the tofus in batter; then roll them in breadcrumbs. Fry tofus until golden brown
-   Alternative II: Mix flours, ground spices, salt & coriander. Pour in coconut milk & water, mix well. Dip tofus in batter & then fry until golden brown.
