Kering Kentang (Sweet & Spicy Fried Potato Chips/Sticks)

Bahan
6 Kentang sdng-ptg korek api            -  1 st Air nipis, ½ st Ketumbar bbk, Minyak syr
125 gr Kacang tanah tanpa kulit       Haluskan:
3 sm Santan, 2 Daun salam                -  2 Cabai merah, 1 Cabai keriting
35 gr Gula jawa, 2 st Garam             -  2 Bawang putih, 1 Bawang merah
3 Bawang putih-hlskan & bagi 2        -  1 st Ketumbar, 1 cm Lengkus-parut

Cara membuat
-   Campur kentang dng ½ bag. baw.putih, ketumbar bbk & ½ st garam. Diamkan 15 mnt, goreng. Rendam Kacang di air secukupnya dng sisa baw.putih & ½ st garam ± 15 mnt, goreng. Sisihkan
-   Tumis bumbu halus, beri santan & bahan lain. Masak diapi kecil sambil aduk2 sampai mengental
-   Angkat, campur di kentang+kacang sesendok2 sambil diaduk rata.

Ingredients
6 Potatoes-thinly sliced/matchstick strips     -  ½ tsp Coriander pwd
125 gr skinless Peanuts, 2 tsp Salt                 Grind into paste:
1 tsp Lime juice, 3 tbsp Coconut milk            -  2 Red chilies, 1 Cayenne pepper
35 gr Coconut Sugar, Vegetable oil                 -  2 cloves Garlic, 1 tsp Coriander
3 cloves Garlic-grind, 2 Bay leaves                  -  1 Shallot, 1 cm Galangal-grated

Directions
-   Mix potatoes with half of ground garlic, coriander pwd & ½ tsp salt. Let it stand for 15 mins; drain & deep fry the potatoes. Mix enough water to cover the peanuts with remaining ground garlic & ½ tsp salt. Soak peanuts in the mixture ± 15 mins; drain & then deep fry the peanuts. Set aside.
-   Sauté ground spices; add in coconut milk & other ingredients. Cook over low heat, stir constantly until the sauce thickens. Remove from heat. Mix the peanuts & potatoes. Pour the mixture into the potatoes & peanuts, one spoon at a time, stir constantly.
