Ayam Kuluyuk/Koloke (Sweet & Sour Chicken)

Bahan
Bahan Saus:                                                       -  1 sm Kecap asin, 3 sm Mentega/Margarin
-  2 st Maizena+2 sm Air, 2 st Cuka           Bahan Ayam:
-  2 cm Jahe & 2 Baw.pth-cincang              -  1 Dada ayam fillet/600 gr-ptg tipis panjang
-  1 st Lada, 2 st Angciu (opsional)             -  2 Baw.putih-hlskan, 1 Telur, Minyak goreng
-  ½ B.bombay-iris2, 250 gr Nanas-ptg2    -  1 st Ketumbar bbk, 1 st Lada, 1 st Garam
-  4 sm Jus nanas, 300 ml Air, 8 st Gula  -  ½ Jrk nipis-peras, 1 sm Kcp asin, Tp. panir
-  1 Wortel-iris hls, 6 sm Saus tomat        -  Tepung terigu secukupnya+½ st Baking soda
-  ½ Paprika/3 Cabai-iris, 1 st Garam
 
Cara membuat
-   Lumuri ayam dng baw.pth, air nipis, lada, garam & ketumbar, diamkan ± 30 mnt. Baluri ayam dng terigu+bak.soda, celup di telur & baluri dng panir. Goreng dlm minyak pns sampai kecokelatan.
-   Saus: Tumis baw.pth, bombay, paprika & jahe dng mentega. Mskkan wortel & nanas, aduk hingga rata. Beri juice nanas, air, bumbu2, angciu, cuka, saus tomat. Didihkan. Tuangi larutan maizena. Aduk hingga mengental.
-   Taruh ayam di piring saji, siram dng sausnya. sesaat sebelum dihidangkan. Aduk hingga ayam terlapis saus dng rata kmd hidangkan segera.
 
Ingredients
Sauce ingredients:                                                -  1 tbsp salty Soya sauce
-  2 tsp Corn starch+2 tbsp Water                  -  2 tsp Chinese rice wine (optional)
-  2 cm Ginger & 1 clove Garlic-minced          Chicken ingredients:
-  3 tbsp Butter/Margarine, 1 tsp Pepper       -  1 Chicken breast fillet/600 gr-sliced
-  ½ Onion & ½ Paprika/3 Red chilies-sliced    -  2 cloves Garlic-grind, 1 Egg, Frying fat
-  250 gr Pineapple-cut small, 8 tsp Sugar     -  1 tsp Salt, 1 tbsp salty Soya sauce
-  4 tbsp Pineapple juice, 300 ml Water         -  1 tsp ground Coriander, 1 tsp Pepper
-  1 Carrot-matchstick sliced, 1 tsp Salt       -  ½ Lime, enough Breadcrumbs
-  6 tbsp Tomato sauce, 2 tsp Rice vinegar    -  enough Flour+½ tsp Baking soda
 
Directions
-   Rub the chicken with garlic, lime juice, pepper, salt & coriander. Let it stand for 30 mins. Roll the chicken in the flour mixture; dip slightly in the egg; then roll them in the bread crumbs. Fry until golden brown & then set aside.
-   Sauce: Sauté garlic, onion, ginger & paprika with butter. Stir in the carrot & pineapple, combine well. Pour in water, pineapple juice, Chinese rice wine, vinegar, tomato sauce & seasoning. Bring it to a simmer, then pours in the cornstarch mixture. Cook until the sauce becomes rather thick.
-   Place the fried chicken in a serving plate; then pour the sauce over. Toss to lightly coat the chicken with the sauce & serve immediately.
