Soto Bandung (Beef and Daikon Soup ala Bandung)


In Indonesian & English

Bahan
-  500 gr Daging-ptg dadu, 1½ lt Air, 1 st Gula  Haluskan:
-  1 Lobak-iris tipis, 1 st Kaldu bbk, 1 st Lada   -  1 cm Kencur, 5 Bawang pth
-  2 Daun bwng-iris, 2 Daun Jeruk, 2 D. salam   -  4 cm Jahe, 2 Kemiri
-  100 gr Kedelai-rndm air 1 jam, 2 st Garam     Sambal:
-  2 st Cuka, 2 cm Lengkuas & 2 Sereh-geprek    -  25 Rawit hijau, 2 Bawang pth
-  1 sm Seledri cincang, Minyak goreng                   -  50 ml Air kaldu, ¼ st Garam

Cara membuat
-   Goreng kedelai. Tumis bumbu hls. Rbs daging, lobak, bumbu hls & bhn lain (kec. kedelai, seledri & daun bwng). Masak hingga daging & lobak empuk. Masukkan daun bawang, aduk, angkat.
-   Sambal: Haluskan rawit & bawang putih. Tumis sebentar, angkat lalu campur dng 50 ml air kaldu dari soto.
-   Tuang soto ke mangkuk saji. Taburi seledri & kacang kedelai. Makan dng sambal rawit.

Ingredients
-  500 gr Beef meat-dice cut, 2 tsp Salt    -  1 tsp Sugar, 2 tsp Vinegar, 1½ lt Water
-  1 Daikon radish-sliced, 1 tsp Pepper         Grind into a paste:
-  2 Green onions-sliced, 2 Bay leaves             -  4 cm Ginger, 1 cm Lesser Galangal
-  100 gr Soybeans-soaked 1 hour in water   -  2 Candlenuts, 2 cloves Garlic
-  2 cm Galangal & 2 Lemongrass-bruised       Chili paste:
-  1 tsp Broth pwd, 2 Kaffir lime leaves         -  25 Bird`s eye chilies, ¼ tsp Salt
-  1 tbsp chopped Celery leaves, Frying fat   -  50 ml Broth, 2 cloves Garlic

Directions
-   Drain the beans & then fry. Sauté the spices paste. Boil the meat, radish & other ingredients (with the exception of soy beans, celery & green onions). Cook until the meat & radish are tender. Stir in green onions; remove from the heat.
-   Chili paste: Grind the chilies & garlic; sauté for awhile. Remove from the heat; pour in 50 ml of the broth from soup.
-   Pour the soup in serving bowl, sprinkle with chopped celery & fried soy beans. Eat the soup with the chili paste.
