Soto Bandung (Beef and Daikon Soup ala Bandung)

Bahan
  • 500 gr Daging-potong dadu, 1½ lt Air, 1 st Gula
  • 2 st Cuka, 1 Lobak-iris tipis, 1 st Kaldu bubuk
  • 2 Daun bawang-iris, 2 Daun Jeruk, 2 Daun salam
  • 100 gr Kedelai-rendam air 1 jam, 2 st Garam
  • 2 cm Lengkuas & 2 Sereh-geprek Minyak goreng
  • 1 sm Seledri cincang, 1 st Lada bubuk
Haluskan:
  • 1 cm Kencur+5 Bawang putih+4 cm Jahe+2 Kemiri
Sambal:
  • 25 Rawit hijau, 2 Bawang putih
  • 50 ml Air kaldu, ¼ st Garam

Cara membuat
  • Tiriskan lalu goreng kedelai, sisihkan. Tumis bumbu halus. Rebus daging, lobak, bumbu halus & bahan lain (kecuali kedelai, seledri & daun bawang). Masak hingga daging & lobak empuk. Masukkan daun bawang, aduk, angkat.
  • Sambal: Haluskan rawit & bawang putih. Tumis sebentar, angkat lalu campur dengan 50 ml air kaldu dari soto.
  • Tuang soto ke mangkuk saji. Taburi seledri & kacang kedelai. Makan dengan sambal rawit.

Ingredients
  • 500 gr Beef-diced, 1½ lt Water, 2 tsp Vinegar
  • 1 Daikon radish-sliced, 1 tsp ground Pepper
  • 2 Green onions-sliced, 2 Bay leaves, 1 tsp Sugar
  • 100 gr Soy beans-soaked for 1 hour in water
  • 2 cm Galangal & 2 stalks Lemongrass-bruised
  • 1 tsp Broth powder, 2 Kaffir lime leaves, Oil
  • 1 tbsp chopped Celery leaves, 2 tsp Salt
Grind into a paste:
  • 4 cm Ginger, 1 cm Lesser Galangal
  • 2 Candlenuts, 2 Garlic cloves
Chili paste:
  • 25 Bird`s eye chilies, ¼ tsp Salt
  • 50 ml Broth, 2 Garlic cloves

Directions
  • Drain the beans & then fry; set it aside. Sauté the spices paste. Boil the meat, radish & other ingredients (with the exception of soy beans, celery & green onions). Cook until the meat & radish are tender. Stir in green onions; remove from the heat.
  • Chili paste: Grind chilies & garlic & then sauté for awhile. Remove from the heat; pour in 50 ml of the broth from soup.
  • Pour the soup in serving bowls; sprinkle with chopped celery & fried soy beans. Eat the soup with the chili paste.
