Gulai Daging Padang (Beef Curry ala Padang)


In Indonesian & English

Bahan
-  1 kg Daging-ptg2, 2 Kentang-ptg dadu          Haluskan:
-  500 ml Santan kental, 1 st Asam, 2 Kapulaga   -  10 Baw.mrh, 5 Baw.pth, 4 cm Jahe
-  2 cm Lengkuas & 3 Sereh-geprek, 1 st Gula     -  1 st Grm, 1 st Lada, 2 st Pala bbk
-  300 ml Air, 4 Dn jeruk, 4 Dn salam, ½ Pekak   -  10 Cabai merah, 5 Rawit, 8 Kemiri
-  3 Cengkeh-geprek, 4 cm Kayu manis             -  ½ sm Ketumbar & ½ st Jintan sangrai
-  1 st Klabet/1 st Curry bubuk, Minyak            -  1 cm Kencur, 2 cm Kunyit

Cara membuat
-   Tumis bumbu halus dng minyak sampai harum, beri bumbu2 lain. Masukkan potongan daging & kentang, aduk rata.
-   Tuangkan santan dan air, aduk perlahan supaya santan tidak pecah. Masak sampai daging lunak/empuk dan santan berminyak.

Ingredients
-  1 kg Beef-cut, 2 Potatoes-dice cut          Grind into a paste:
-  500 ml Coconut milk, 1 tsp Tamarind         -  5 cloves Garlic, 4 cm Ginger
-  2 cm Galangal & 3 Lemongrass-bruised       -  1 tsp Pepper, 2 tsp ground Nutmeg
-  300 ml Water, ½ Star anise, Frying oil      -  10 red Chilies, 5 Bird`s eye chilies
-  3 Cloves-crushed, 4 Kaffir lime leaves       -  ½ tbsp Coriander & ½ tsp Cumin-roasted
-  1 tsp Sugar, 2 Cardamom, 4 Bay leaves     -  1 cm Lesser galangal, 2 cm Turmeric
-  4 cm Cinnamon, 1 tsp Fenugreek leaves      -  1 tsp Salt, 8 Candlenuts, 10 Shallots

Directions
-  Sauté the spices paste with oil until fragrant, add in all spices. Put in the meat & potatoes, mix well.
-  Pour in coconut milk & water; stir gently. Cook until the meat tender & the gravy becomes greasy.
