Dendeng Balado (Dried Beef with Chili Paste)


In Indonesian & English
Bahan
1 kg Daging paha sapi, 2 cm Jahe, 1 Nipis     Bhn Sambal:
2 Kentang-ptg korek api & goreng, Air             -  1 Baw.pth, 2 Dn jeruk, 2 Kemiri
2 cm Lengkuas & 1 Sereh-geprek, Minyak       -  1 Tomat kecil, 2 Cabai Keriting
Haluskan:                                                                      -  5 st Air kelapa/Santan, 8 Baw.mrh
4 Baw.pth, 2 Baw.mrh, 1 sm Ketumbar           -  ½ st Air jrk limau, 5 Cabai mrh
Garam secukupnya                                                   -  2 cm Kencur (opsional), Garam

Cara membuat
-   Mskkan daging ke freezer sampai ½ beku kmd iris tipis2 & lebar, sisihkan.
-   Tumis bumbu hls. Didihkan bumbu hls, sereh, lengkuas, jahe dng air yg cukup utk merendam daging. Matikan api, beri air nipis & daging. Dinginkan, rendam daging semalaman. Tiriskan, goreng sampai garing kecoklatan, tiriskan di kertas minyak. (Panggang di oven dng api atas 250° C selama ± 40-45 mnt hingga garing, kecoklatan).
-   Balado : Giling kasar bahan sambal (kec. dn jrk & santan), lalu goreng, beri dn jeruk & santan. Aduk sebentar sampai sambal matang, angkat.
-   Campur gorengan daging & kentang dng balado sebelum dihidangkan.

Ingredients
1 kg Top side beef, 2 cm Ginger               Chili paste:
2 Potatoes-shredded & deep fried             -  2 Cayenne peppers, 2 Kaffir lime leaves
2 cm Galangal-crushed, 1 Lime, Water    -  2 cm Lesser galangal (option), 8 Shallots
1 Lemon grass-bruised, frying Oil              -  5 tsp Coconut juice/coconut milk, Salt
Spices to grind:                                                  -  ½ tsp Kaffir lime juice, 1 small Tomato
4 cloves Garlic, 2 Shallots                            -  2 Candlenuts, 5 red Chilies, 1 clove Garlic
1 tbsp Coriander, enough Salt

Directions
-   Put the meat in the freezer until ½ frozen; then slice the meat really thin & rather wide. Set aside.
-   Sauté ground spices. Boil sautéed spices, lemon grass, galangal & ginger with water (enough to marinate the meat); bring it to a simmer. Turn off the heat; add in lime juice & sliced meat. Let it chill; marinate the meat on it over night. Drain the meat; deep fried in hot frying oil until the meat color becomes brown; then drain on paper towel (Roast the meat in the oven 250° C ± 40-45 min until the meat becomes brown & crispy).
-   Chili paste: Coarsely pound chili paste ingredients with the exception of lime leaves & coconut juice. Sauté the chili paste until fragrant, add in coconut juice/milk & lime leaves. Stir for awhile until the chili paste cooked & then remove from the heat.
-   Mix the fried meat & potatoes with the chili paste before serving.
