Nasi Goreng Kencur (Lesser Galangal Fried Rice)

Bahan
  • 300 gr Nasi putih, 2 sm Kecap manis, 3 sm Minyak goreng
  • 100 gr Fillet ayam-goreng & suwir, 2 Daun bawang-iris
  • 1 Ketimun & 1 Tomat-iris, Bawang goreng-utk taburan
  • 2 Telur-buat orak arik, 4 cm Kencur-cincang halus
Haluskan:
  • 3 Bawang merah, 2 Bawang putih, 4 cm Kencur
  • 2 Cabai merah, 6 Rawit, 1 st Lada, 2 st Garam

Cara membuat
  • Tumis bumbu halus. Masukkan kecap, telur, ayam & nasi. Masak & aduk sampai nasi kering & harum.
  • Tambahkan daun bawang, aduk rata, masak sebentar saja. Angkat dari api. 
  • Taruh nasi di piring2 saji lalu taburi bawang goreng. Sajikan dengan ketimun & tomat.

Ingredients
  • 300 gr cooked Rice, 2 Eggs-scrambled, 2 Green onions-sliced
  • 1 Tomato & 1 Cucumber-sliced2 tbsp Sweet Soy sauce
  • 100 gr Chicken Fillet-fried & shredded, 3 tbsp frying Oil
  • 4 cm Kaempferia/Lesser Galangal-minced, fried Onion
Grind into a paste:
  • 6 Bird`s Eye Chilies, 3 Shallots, 2 Garlic cloves, 2 tsp Salt
  • 2 Red Chilies, 4 cm Lesser Galangal, 1 tsp Pepper

Directions
  • Sauté the spices paste. Put in soy sauce, chicken, scrambled eggs & rice. Fry & stir until the rice dries & smells good.
  • Add in green onion; stir it well & cook just for awhile. Remove rice from the heat
  • Place rice in serving plates & sprinkle with fried onion. Serve it with cucumber & tomato.

Sambal Goreng Kentang & Udang (Spicy Fried Potatoes & Shrimps)

Bahan
  • 700 gr Kentang-iris dadu, 1 sm Gula merah, 250 ml Santan
  • 200 gr Udang, 2 Daun jeruk, 10 biji Petai-iris (optional)
  • 2 cm Lengkuas & 1 Sereh-geprek, 3 Daun salam, 2 Asam
Haluskan
  • 10 Cabai merah, 6 Bawang merah, 3 Bawang putih
  • 2 st Garam, 1 Tomat, 1 cm Jahe, 3 Kemiri

Cara membuat
  • Remas2 kentang dengan garam secukupnya, diamkan 15 menit, goreng hingga kuning kecokelatan
  • Tumis bumbu halus hingga wangi. Masukkan lengkuas, sereh, daun jeruk, salam, asam, petai, santan. Masak sebentar lalu beri gula merah. Aduk sesekali & masak sampai santan susut. 
  • Masukkan kentang & udang, aduk & masak sampai santan mengering lalu angkat.
  • Sajikan bersama nasi putih atau sebagai hidangan pelengkap, misalnya untuk Nasi Kuning-Tumpeng maupun Lontong Sayur Medan.

Ingredients
  • 700 gr Potatoes-diced, 250 ml Coconut milk, 3 Bay leaves
  • 2 cm Galangal & 1 Lemongrass-bruised, 1 tbsp Brown sugar
  • 200 gr Shrimps, 2 Kaffir lime leaves2 Tamarind
  • 10 Stinky beans-sliced (optional)
Grind into a paste:
  • 6 Shallots, 3 Candlenuts, 3 Garlic cloves, 1 cm Ginger
  • 10 Chilies, 1 Tomato, 2 tsp Salt

Directions
  • Squeeze potatoes with enough salt & then let it stand for 15 minutes. Fry it until golden brown.
  • Sauté spices paste until fragrant. Stir in galangal, lemon grass, bay & lime leaves, tamarind, stinky beans, coconut milk. Cook for awhile & then add in brown sugar. Cook until the coconut milk reduce; stir occasionally.
  • Put in fried potatoes & shrimps: cook & keep stirring it until it all dries.
  • Serve this spicy fried Potato with steamed white rice; as side dish for Indonesian Yellow Rice or Vegetables in coconut broth Medan Style.

Ayam Suwir Pedas/Sisit Bali (Balinese Spicy Shredded Chicken)

Bahan
  • 2 Dada ayam-rebus & suwir2, 300 ml Santan, 5 Daun jeruk
  • 2 sm Air asam, 1 cm Lengkuas & 2 Sereh-geprek, Minyak
  • 2 Daun salam, 1 sm Gula jawa-sisir, 2 sm Kecap manis
  • 1 Jeruk limau
Haluskan:
  • 5 Cabai merah, 10 Bawang merah, 4 Kemiri, 5 Bawang putih
  • 3 Cabai keriting, 2 cm Kencur, 2 cm Kunyit, 2 cm Jahe
  • 2 st Garam, 1 st Lada, 1 st Terasi

Cara membuat
  • Panaskan oven 200°C. Tumis bumbu hls hingga harum. Mskkan santan, ayam, daun jeruk, sereh, lengkuas, salam, kecap, gula jw & air asam. Masak hingga cairan terserap.
  • Panggang ayam 15 menit. Keluarkan lalu beri air perasan jeruk limau, aduk.
  • Sajikan dng nasi hangat & lauk lain seperti: Jukut Kacang PanjangGedang Mekuah Bali atau Lawar Putih Ayam dan Sambal Matah. Dapat juga disajikan sbg hidangan pendamping untuk Nasi Kuning (klik pada link untuk resep2nya).

Ingredients
  • 2 Chicken breasts, 300 ml Coconut milk, 1 tbsp Brown sugar
  • 5 Kaffir lime leaves, 1 Kaffir lime, 2 Bay leaves, frying Oil
  • 1 cm Galangal+2 Lemongrass-bruised, 2 tbsp Tamarind juice
  • 2 tbsp sweet Soy sauce
Grind into a paste:
  • 5 Garlic cloves3 Cayenne peppers, 2 cm Lesser galangal
  • 5 Red chilies, 1 tsp Pepper, 2 cm Turmeric, 2 cm Ginger
  • 2 tsp Salt, 10 Shallots, 4 Candlenuts1 tsp Shrimp paste

Ayam Woku (Woku Chicken/Manadonese Spicy Chicken)

Bahan

  • 1 Ayam-potong, 1 st Garam, 30 Daun kemangi, ½ st Gula
  • 2 sm Air jeruk nipis, 2 Sereh-geprek, 200 ml Kaldu ayam
  • Minyak, 100 ml Santan* (opsional)

Iris halus:

  • 5 Cabai hijau**, 7 Daun jeruk, 1 Pandan, 1 Daun kunyit
  • 3 Daun bawang

Haluskan:

  • 4 Rawit, 3 Cabai keriting, 7 Cabai hijau**, 2 cm Kunyit
  • 3 Bawang putih, 8 Bawang merah, 1 Tomat, 6 Kemiri
  • 3 cm Jahe, 2 st Garam

 

Cara membuat

  • Lumuri ayam dng garam & air nipis, diamkan 30 menit. Goreng ayam setengah matang.
  • Tumis bumbu halus dengan minyak. Masukkan ayam & bahan lain (kecuali kemangi & daun bawang), aduk rata. Beri air (& santan), didihkan. Kecilkan api ke sedang-kecil.
  • Masak & aduk2 sampai ayam matang, kuah sangat menyusut & mengental. Masukkan daun bawang & kemangi, masak & aduk lagi 2 menit. Angkat dan hidangkan
  • * Jika menggunakan santan, ayam ini biasa disebut dengan ayam tuturaga. Biasanya kuah juga dibiarkan agak banyak & lebih cair (seperti opor). ** Cabai hijau dapat juga diganti dng cabai merah, tapi saya pribadi lebih suka menggunakan cabai hijau utk masakan ini.

 

Ingredients

  • 1 Chicken-cut, 200 ml Chicken broth, 2 tbsp Lime juice
  • 2 Lemongrass-bruised, ½ tsp Sugar, 1 tsp Salt, frying Oil
  • 30 Lemon basil leaves, 100 ml Coconut milk* (optional)

Thinly sliced:

  • 7 Kaffir lime leaves, 1 Pandan leaf, 3 Green onions
  • 1 stalk Turmeric leaves, 5 Green chilies**

Grind into a paste:

  • 4 Bird`s eye chilies, 6 Candlenuts, 2 cm Turmeric
  • 3 Cayenne peppers, 7 Green chilies**, 2 tsp Salt
  • 8 Shallots, 1 Tomato, 3 Garlic cloves, 3 cm Ginger

 

Directions

  • Rub the chicken with salt & lime juice; let it stand for 30 minutes; then fry until half cooked.
  • Sauté the spices paste with oil. Stir in the chicken & other ingredients with the exceptions of basil leaves & green onions. Pour in the water (& coconut milk); bring it to a boil. Reduce the heat to medium-low.
  • Let it simmer & stir often until the chicken tender, the gravy reduce & thickens. Stir in basil leaves & green onions. Cook for another 2 minutes. Remove from the heat & serve.
  • * When you're using the coconut milk, the dish name is Ayam/Chicken Tuturaga. And for Ayam Tuturaga, you don't have to cook it until the liquid really reduced & thickens. ** You could also substitute the green chilies with red chilies, but personally, I prefer to use green chilies for this dish.

Italian Style Schnitzel with Spaghetti & Tomato Sauce

Bahan
  • 500 gr Daging/Ayam fillet-iris setebal 1-1½ cm, Minyak
  • 1 st Rosmary, Garam, Lada bubuk, Ketumbar bubuk
  • 3 sm Mentega, 100 gr Terigu, 100 gr Parmesan parut
  • 100 gr Panir, 3 st Oregano segar-iris, 2 Telur-kocok
Spaghetti:
  • 250 gr Spaghetti, 2 sm Olive oil, 1½ lt Air+2 sm Garam
Saus Tomat:
  • 1 Bawang bombay-iris, 1 sm Tomat pasta, 8 Olive-iris
  • 3 Bawang putih-cincang, 1 st Oregano kering, 1 st Gula
  • 7 Tomat besar, 2 sm Olive oil, 2 st Garam, 2 st Thyme
  • 1 st Balsamico, 5 Champignon & ¼ Paprika/2 Cabai-iris
  • 1 st Lada bubuk, 2 Daun salam

Cara membuat
  • Schnitzel: Campur daun oregano, keju, rosmary & panir, sisihkan. Lumuri daging dengan garam, lada & ketumbar lalu diamkan ½ jam. Lapisi daging dengan terigu, celup di telur, lapisi dengan panir. Panaskan mentega+minyak. Ggoreng daging hingga kecokelatan, angkat, tiriskan di kertas minyak
  • Saus: Didihkan air, rebus tomat sampai merekah. Angkat, kupas kulit, potong2. Tumis bawang putih, bombay & paprika dengan olive oil. Masukkan tomat, jamur, olive, salam, oregano, thyme. Masak di api kecil sampai tomat hancur, beri tomat pasta, balsamico, garam, lada & gula. Aduk rata.
  • Spaghetti: Didihkan air+garam, masukkan Spaghetti, masak sampai matang. Angkat, & tiriskan. Beri sedikit olive oil, aduk rata.
  • Atur daging dan spaghetti di piring saji, tuang saus di atas spaghettinya.

Ingredients
  • 500 gr Pork/chicken fillet100 gr Flour3 tbsp Butter
  • 100 gr Parmesan, 2 Eggs-beaten, 1 tsp Rosemary, Oil
  • 100 gr Breadcrumbs, 3 st fresh Oregano-sliced, Salt
  • ground Coriander, ground Pepper
Spaghetti:
  • 250 gr Spaghetti, 1½ lt Water+2 tbsp Salt
  • 2 tbsp Olive oil
Tomato Sauce:
  • 5 Champignon & ¼ Paprika/2 Chilies-sliced, 1 tsp Sugar
  • 2 tbsp Olive oil, 1 tsp Balsamico1 tsp ground Pepper
  • 2 Bay leaves7 big Tomatoes, 1 tsp dried Oregano
  • 3 Garlic cloves-chopped, 8 Olives & 1 Onion-sliced
  • 2 tsp Salt, 1 tbsp Tomato paste, 2 tsp Thyme

Directions
  • Schnitzel: Combine the oregano, parmesan, rosemary & bread crumbs; set it aside. Slice meat 1-1½ cm thick & then rub it with enough salt, pepper & coriander. Let it stand for 30 minutes. Coat the meat with flour. Dip it into beaten eggs & then cover all with bread crumbs. Preheat frying oil & butter; fry the meat until golden brown. Lift from the stove & drain on paper towels.
  • Sauce: Boil a pot of water, cook tomatoes until the skin cracked. Then lift from the water & peel the skin completely. Slice it small & set aside. Sauté onion, garlic & paprika with olive oil. Add in the tomato slices, champignon, olives, bay leaves, dried oregano & thyme. Cook over low heat until the tomato smooth; then put in tomato paste, balsamico, salt, pepper, sugar. Stir & cook until the sauce thickens.
  • Spaghetti: Boil spaghetti in boiling water+salt until it's cooked & then drain it with a strainer. Put spaghetti in a bowl; mix it well with a little olive oil.
  • Place the meat & spaghetti in serving plates, pour tomato sauce over.
